The idea for Fondant Kabusecha came to life just before the opening of Ise Sueyoshi. In a kaiseki-style counter dining setting, the immediate serving of freshly prepared dishes is one of the joys that guests can savor. Just as freshly sliced sashimi, freshly grilled fish, and freshly cooked rice are served with impeccable timing, I wanted to offer a dessert that could only be enjoyed in a counter dining experience. That’s when I decided to create a warm dessert using Kabusecha, a specialty tea from my hometown in Mie, which also pairs perfectly with vegetarian and vegan and gluten-free preferences, adding a unique touch to our fine dining experience.

The charm of Fondant Kabusecha lies in its simplicity and the depth of its flavor. Kabusecha, a premium tea cultivated in Mie Prefecture, is known for its unique process where the tea leaves are covered before harvest, enhancing its umami and subtle sweetness.
