Experience the Bounty of Mie: Savor Japan’s Lobster, the Ise Ebi!

Discover a New Realm of Japanese Cuisine

When you think of a special Japanese culinary experience, what comes to mind? Authentic omakase sushi prepared by a skilled chef, a luxurious dining experience featuring the finest Wagyu beef, or perhaps the ultimate teppanyaki in Tokyo? What we highly recommend is an indulgent kaiseki experience, a true reflection of Japan’s traditional culinary culture.

The Special Connection Between Ise Ebi and “Ise”

At Ise Sueyoshi, we source the finest ingredients from Mie Prefecture, where Chef Yuuki hails from. Among these treasures is the Ise Ebi, one of Mie’s most celebrated specialties. The name “Ise” in both Ise Sueyoshi and Ise Ebi refers to the same region, and we are proud to offer a kaiseki experience that showcases the best of Mie’s bounty.

This cuisine is not only visually stunning but also represents the traditions of Japanese culinary artistry that linger in the memory long after the meal. Whether you are searching for the best restaurant in Tokyo, an authentic and luxurious omakase experience, or a romantic honeymoon dinner, your journey through Japan’s flavors will be unforgettable.

Gusokuni of Ise Ebi – Tradition Meets Modernity

At Ise Sueyoshi, every ingredient is treated with the utmost respect, particularly the Ise Ebi—Japan’s lobster. Chef Yuuki knows precisely how to bring out the rich sweetness and succulent texture of this exquisite ingredient.

During this season, Ise Ebi is prepared in the traditional style of gusokuni. Slowly simmered in a delicate white miso broth, the rich sweetness of the lobster is accentuated, and its tender texture is enhanced. The broth, carefully extracted from the lobster shells, adds a deep umami to the dish, while the yolk coating adds a creamy richness.

Even without adding any sugar, the natural sweetness of the Ise Ebi stands out. The harmony between this sweetness and the deep flavors of white miso creates a luxurious taste experience that epitomizes kaiseki cuisine. This dish at Ise Sueyoshi is a sublime expression of seasonal Japanese cooking and embodies the allure of kaiseki dining, cherished worldwide.

What Our Guests Say

Oct 2023 • family
“We had the most wonderful experience at Ise Sueyoshi with Chef Yuki-san. My husband and I brought our three adult children (two sons + daughter in-law) to Japan to celebrate our 40th anniversary. Chef Yuki-san provided us an unforgettable kaiseki dining experience. Each dish was artfully presented while Yuki-san explained in perfect English where each ingredient came from—many from his hometown in Mie Prefecture. In addition to a printed menu describing each dish, beautifully printed books with colorful photographs were propped in front of us to help us visualize Chef Yuki-san’s descriptions of where and how the ingredients were sourced. The dishes ranged from deep fried fig to frozen amago, smoked puffer fish, and tuna to venison, lobster, wagyu beef, and a matcha fondant chocolate dessert. Plus so much more! Every taste was unique and pure and fresh. Our daughter in-law doesn’t eat red meat and Yuki-san gracefully provided delicious alternatives for her. Dining with Chef Yuki-san was so much more than just a meal. He is so knowledgeable and passionate about the food he prepares. It was such a gift for our family to be able to experience Ise Sueyoshi during our trip to Japan. Thank you Chef Yuki-san!.” — [Guest Review]
