Menu February and March2026
(20th February-18th March,2026)
Spring Budding
Sankan-shion—in Japan, this is the season when winter and spring come and go in turns, and little by little, the needle of the season moves forward.
Even beneath the soil, spring is quietly beginning. The sunlight softens, the air feels a touch brighter, and small signs of new growth appear at the table.
As snowmelt loosens the earth and plum blossoms begin to open—fresh yellow-green buds, gentle pink plums, and pale yellow wildflowers—kaiseki, too, shifts softly into the tender colors of early spring.
In each course, we tie a subtle hint of the season and present it with care. Please take your time and enjoy these thoughtfully prepared dishes.
