Savor the Season: Experience Japan through Autumn Kaiseki
Discover the Bounty of Japanese Autumn
As the leaves turn and the air becomes crisp, autumn in Japan becomes a season that delights all the senses. This beautiful season brings with it a bounty of culinary treasures. For those seeking the best Japanese cuisine in Tokyo, autumn kaiseki is an experience not to be missed. At Ise Sueyoshi, we offer a special opportunity to savor the essence of Japan’s seasonal cuisine through dishes that embody the spirit of autumn. Discover why our restaurant is considered one of Tokyo’s hidden gems for those looking for an exclusive dining experience.
Hassun: The Deepening of Autumn
The journey through autumn kaiseki begins with Hassun, a dish that signals the start of the season. Named after the autumn leaves carried by the wind, Hassun is a beautifully arranged assortment of seasonal appetizers, representing the bountiful gifts of the season. Using fresh vegetables, mushrooms, and seafood, this dish offers a rich tapestry of flavors and textures, awakening your palate and offering a glimpse into the rich traditions of Japanese cuisine. For those in search of the best kaiseki in Tokyo, this dish is the perfect start to a unique culinary journey.
Rendaiji Persimmon: The Jewel of Autumn
The next highlight is the Rendaiji persimmon, a rare fruit that is as rich in history as it is in flavor. Designated as a natural monument, this persimmon is known for its sweetness and deep orange color, symbolizing the essence of Japanese autumn. At Ise Sueyoshi, we hollow out the persimmon and fill it with a mixture of root vegetables and walnuts, creating a dish that is entirely plant-based and enjoyable for vegan guests as well. This dish, which embodies the textures and flavors of the season, reflects a deep respect for nature and attention to detail, showcasing the essence of traditional Japanese culinary culture.
Hamo and Sugitae Mushrooms: A Seasonal Harmony
No autumn kaiseki meal would be complete without the pairing of Hamo (pike eel) with Sugitae mushrooms, a rare and fragrant local delicacy. This dish, combining the rich flavors of the mushrooms with the tender and fatty Hamo, is both comforting and luxurious, showcasing the depth of flavor that Japanese cuisine is celebrated for. This is a highlight of our autumn kaiseki menu, offering a taste of the season that is not to be missed.
What Our Guests Say
Nov 2018 • couples
“This was a fantastic experience from start to finish. Our visit was in early November 2018, so I think we had the Autumn menu. We sat at the counter (which has only 5 seats), and Chef Yuki Tanaka personally served us directly from the kitchen. His wife and young team supported him. Chef Tanaka speaks good English, and he described each dish, and also took us through a picture-book which showed us the various farmers, sauce brewers and other producers of his ingredients. He was a great host, and it was evident that he is highly committed to ensuring his guests have the best possible experience. Attempting to describe the food doesn’t really do it justice – so I have included some shots, and also our menu on the night, which you can read through, for descriptions. Side 1 is the menu on the night, while Side 2 explains the philosophy and thinking behind each dish. Not sure whether TripAdvisor is loading them in the correct sequence, but fingers crossed. We didn’t opt for the Optional Sake Pairing menu, though I might add that the beer was outstanding… I only had one – but it was poured so perfectly, that it looked like the ones you see in an advertisement. It was the draft beer, which I highly recommend (called the Master’s Dream). The place is a little hard to find, so allow plenty of time to get there. Although the bookings calendar fills up pretty quickly, we actually left it till the last minute. We booked the day before on a week night, for the 5 pm sitting, and there was still space. We didn’t book online, we asked the reception at our hotel to do it, which worked out well. There are already plenty of other 5-star reviews, so I can’t add too much. Suffice to say you should definitely make this a priority when you visit Tokyo!” — [Guest Review]
