Tofu Snow Plum
In Japan, warmer days are beginning to appear, and the first signs of spring are slowly showing. And yet, the chill still lingers—sometimes we even see snowfall.
“Tofu Snow Plum” is a dish that reflects this gentle in-between season. Just as snow may fall on plum blossoms—one of spring’s earliest symbols—winter and spring come and go side by side at this time of year. We capture that shifting scenery in one plate.
Japan has a long tradition of preserving plums by pickling them. Umeboshi—salty and sour pickled plums—have been loved for generations as a simple wisdom of the table. At Ise Sueyoshi, we use a mellow five-year-aged umeboshi, and gently layer it with naturally sweet tofu, like a soft blanket of “snow.” With each bite, the deep sour-salty taste of the plum and the gentle sweetness of tofu melt together, leaving an aftertaste that feels like spring light quietly appearing beyond winter.
